- Soak the Tapioca / Sabudana for about 3 hours so that it becomes soft and gets easily cooked.
- Boil the potatoes for about 20 min until they are perfectly cooked.
- Peel and mash the potatoes with the help of a fork.
- Now add in the Red Chilli Powder, Turmeric Powder, Garam Masala Powder, Jeera Powder, and Salt to taste and some Green Chillies to the mashed potato.
- Add in the Soaked Tapioca / Sabudhana on to the mixture.
- Add chopped Cilantro and squeeze some lemons and Lemon Zest to add the tanginess.
- Mix well until all the spices and the tapioca and potatoes are combined and form nice dough.
- Now make lemon sized balls with these mixtures and keep aside.
- For Mint Chutney Bombs:
- In a blender add in Grated Coconut, Mint leaves, Cilantro, Tamarind, Lemon Juice and Green Chillies and form a thick paste.
- We need this Chutney to be little thick because this needs to be filled in the sabudana vada.
- If the prepared chutney is bit runny then make sure to discard the water by sieving it.
- Now take the prepared tapioca Balls, flatten it and add a teaspoon of thick Mint Chutney and wrap it and roll the balls.
- Follow the same procedure and keep aside the tapioca/ sabudana vada balls ready.
- Now you can deep fry these sabudana vada, until it turns out light crisp golden brown..
- Making on a healthier way I preferred to fry the vadas on the above pan, bit in traditional way.
- Pre heat the above pan, then add small amount of cooking oil or butter, then pour in the mixture on to the holes of pan elegantly.
- Leave it to cook on a medium low heat, until it turns out nice golden brown.
- Serve the tapioca vada with delicious chutney, hot.
