- Continue frying on low heat untill the coconut flakes become s crisp and brown
- Spread on a tray and allow to cool before packing
In a large bowl, toss together the onion, cucumber, tomatoes, olives, mint, and parsley. In a small bowl, whisk together the flour, paprika, and some salt and pepper. Bring coconut milk with water to the boil and cook diced beetroot over low heat until soft. Puree beets with just enough cooking liquid so that you get a spreadable puree. Stir in diced fish and season with salt, pepper and curry spice mixture.
