  1. For an early morning breakfast, wash & soak the rice urad dal & fenugreek seeds in clean water for 4 hours on the previous evening. Grind it finely in a wet grinder with 1 -2 cups of water. The batter should be thick but of flowy consistency.
  2. Once done, pour the batter to a deep cooking pot. Add 1/4 tsp of salt & 1 tbsp of sugar and mix well. Hand whisk the batter well for 2 to 3 mins. Cover the lid and allow it to ferment for 8-10 hrs. It ferments well in warm environment. On wintery nights place the batter on warm water so that it ferments well.
  3. Next morning keep a idli steamer with sufficient water on high flame. Meanwhile pour the fermented batter to the idli cups (upto 3/4th level to avoid spillage) and place them on the steamer & close the lid. When water boils & steam is seen on the sides of the lid, simmer the flame to the lowest & cook for 12 - 15 min & then switch off the flame.
  4. Open the lid & remove the idli cups/ stand carefully and allow it to cool for around 5 to 10 min. With the gentle tap idli comes out easily from the cup. Hot, soft & spongy idlis are ready to be served with fish, chicken or mutton gravy, sambar & chutneys.
