A vegetarian chili makes a lovely change to a normal chili. Add the garlic, chili powder, cumin, smoked paprika and oregano. Add peppers, mushrooms, onion,celery, and garlic. Add the oregano, cumin, chili powder, and salt.

- Start by chopping all fresh veggies into small cubes. Then brown mince in olive oil and then add onion. Cool till browned then add fresh veggies. Cook till soft then add all other ingredients and leave to simmer for an hour or so. I like to add extra chilli to mine once served but 1 chilli will do if you have children eating it too. I like to serve my chilli with steamed rice, guacamole, jalapeños, tortillas, cheese and sour cream. I also sprinkle fresh coriander and spring onion on mine.
Add peppers, mushrooms, onion,celery, and garlic. Add the oregano, cumin, chili powder, and salt. Stir and cook for a few more minutes. It was good, and thinner than the canned Amy's organic vegetarian chili that I am used to buying. Heat olive oil in a large pot over medium-high heat.
