- In a pan, heat oil as required. And add ginger garlic, cumin, bay leaves and cinnamon sticks. To that, add 1 large chopped onion and cook till translucent.
- Then add finely chopped tomatoes. Cook till mushy. After that, add chicken, red chilli powder, salt and garam masala powder. Cook well on medium heat add little water if required.
- After cooking for a few minutes, add Shan Bombay Biryani masala and yoghurt. Cook well on medium to low heat.
- Cover and cook for 10 minutes on medium low heat then cook on high flame for 5 more minutes.
- Soak 1 cup basmati rice for 15-20 minutes. Then add to 2 cups of boiling water. To that add salt as required, bay leaves and cardamoms. When rice begins to cook al dente, then cook for no longer than 3 more minutes.
- Layer the biryani and put on dum to cook for 10 minutes
- Also add fried onions on top and some chopped coriander leaves. Enjoy.
