The ingredients needed to make Dum Aloo:
- Make ready 500 grams baby potatoes
- Take 2 medium sized onions roughly chopped
- Make ready 3 medium sized tomatoes roughly chopped
- Make ready 1 tbsp minced garlic
- Make ready 1 tsp minced ginger
- Take 1 tbsp cashew nuts
- Take 1 tsp jeera
- Take 2 whole elaichi freshly crushed
- Take 1 inch cinnamon stick
- Make ready 1 + 2 tbsp oil
- Take 1 pinch hing
- Prepare Salt to taste
- Get 1 + 1 tsp red chilli powder
- Take 1/4 tsp + 1/4 tsp turmeric powder
- Take 1 tsp + 1 tsp dhana jeera powder
- Get 1 tsp garam masala
- Get 1 tsp kasuri methi
- Take Coriander to garnish
Blend in a mixer to a smooth purée. Dum Aloo is a potato curry which is made using baby potatoes."Dum" refers to dum cooking in Indian cuisine where dishes are cooked on low heat by sealing the pot. For example this vegetable biryani uses the same method. Dum cooking enhances the flavor of the dish.
Steps to make Dum Aloo:
- Heat 1 tbsp oil in a kadhai and Jeera, elaichi and cinnamon stick. Let it splutter. Then add hing, ginger, garlic till it is aromatic. Now add onions, cashews and salt and cook till onions are cooked well.
- Now add tomatoes to it and let it cook till tomatoes are soft and mushy. Let it cool down and then grind it into fine paste.
- Now comes the trick. Sometimes it does happen that the potatoes in dum aloo taste bland when we take a bite. So we shall marinate the potatoes
- Boil and peel the baby potatoes. In a bowl take salt, 1 tsp chilli powder, 1/4 tsp turmeric powder, 1 tsp dhana jeera powder and mix well. Now coat the potatoes with this masalas and keep it aside for 10 to 15 minutes.
- Now take 2 tbsp oil in kadhai and cook the potatoes for 2 minutes mixing it lightly. Keep the potatoes aside.
- Now in the same kadhai, some oil would be left. Add 1 tsp chilli powder (as per taste), 1/4 tsp turmeric powder, 1 tsp dhana jeera powder and mix it. Now add the cooked onion tomatoes paste to the masala. Cook for sometime till oil seperates.
- Now add the marinated and roasted potatoes. You may add water to adjust the consistency. Cook for 5 minutes mixing it lightly in few intervals avoiding the potatoes from breaking. Add garam masala and kasuri methi and cook for more 2 minutes.
